Croque Inez

A while back, I had a day off from work and I had it all to myself since the boyfriend had to work. The perfect time to experiment with food because there's no one there to see me fail if it all goes horribly wrong. That's when I came up with this 'Croque Inez' (for lack of a better name).

Most of you probably know the classic Croque Monsieur and its variants (croque madame, hawaï, ...) which I adore but sometimes you just want something different. Inspired by a delicious bagel I ate once at Jackie's Bagel bar, I came up with my own version of this classic. Arugula, pesto, bacon and mozzarella are the key ingredients of this toast. And pine nuts of course, they were the reason I invented this croque in the first place.

Ingredients (for 1 croque)

  • 2 slices of bread
  • 2-3 slices of bacon + little butter to bake
  • a jar of pesto
  • mozzarella
  • handful of pine nuts (maybe a little less)
  • rocket salad / arugula

Preparation

  1. Smear some pesto on 1 slice of bread.
  2. Put some arugula on top of the pesto.
  3. Bake the bacon in a pan with some butter and when done, try to get rid of as many fat as possible by dipping it with some paper towels. Put this on top of the arugula.
  4. You guessed it: put some slices of mozzarella on top of the bacon.
  5. Fry the pine nuts shortly in a clean pan (no butter required) but keep an eye on it, they burn easily. And yes, put this on top of the mozzarella.
  6. Finally, top of with the other slice of bread and put it in a croque monsieur machine for a couple of minutes (or a pan, or a toaster whatever you prefer). I make sure the mozzarella is melted because than it's at its best.
