Oatmeal Chocolate Chip Cookies.

So recently, I've discovered oatmeal. Or better yet, my mom has re-discovered oatmeal and introduced me to it. Although I haven't tried it as breakfast yet, it doesn't really look too appetising to me. But that doesn't stop me from trying it in other recipes! As you may remember, I've already tried a rhubarb and strawberry crumble and these oatmeal blinis. I've heard a lot about oatmeal cookies and voila, I gave that a try too! Even if I say so myself; it was quite good! And easy! Cooking time aside, it took me like 10 minutes to make the dough for these cookies. Ingredients (I got about 30 cookies out of it)

  • 120 g softened butter
  • 100 g granulated sugar
  • 100 g brown sugar
  • 1 egg
  • 1/2 tbs vanilla extract
  • 2 tbs milk
  • 175 g oatmeal
  • 175 g all purpose flour
  • 1/2 tbs baking soda
  • 2 handfuls of chocolate chips

Preparation

  1. Preheat the oven to 175°C.
  2. Add the sugars together in one bowl and mix them into the softened butter (I just did this by hand with a spatula but you can do it in a machine too, I guess)
  3. Add in the vanilla extract, the egg and the milk.
  4. Add the flour.
  5. Stir in the oats. If you were using a machine, you might want to switch to a spatula at this point. The dough gets kind of thick.
  6. Stir in the chocolate chips.
  7. Line small 'cookie balls' on a baking sheet. Mine were between 2 and 3 cm and I could fit about 12 on one sheet.
  8. Bake the cookies in the oven for 11 minutes and when they're done, let them sit in the oven for a little while longer before you take them out.
  9. On to the next batch!
