Chocolate Chip Cookie (Dough) pie.

Chocolate chip cookies for the win! I love me some chocolate chip cookie anything, so when I saw this recipe for a chocolate chip cookie PIE (say whaaaat?!), I couldn't resist. Besides, I've planned a date with some of my friends to celebrate my birthday (I made this a while back) and I have to treat them with something, right? I made my own version of the original recipe (as always; I didn't have everything and was too lazy to go to the store) but mine looks pretty good too, no? Anyway, I'm sure by now you're drooling all over this pie and you're dying to find out how to make it. It's up to you to choose which recipe you like better. Ingredients

Crust

  • 280 g all purpose flour
  • 1/2 ts baking soda
  • 1/2 ts salt
  • 200 g butter (melted)
  • 80 g dark brown sugar
  • 120 g light brown sugar
  • 100 g granulated sugar
  • 1 egg
  • 1 tbs vanilla extract
  • chocolate chips

Filling

  • 200 g butter
  • 200 g light brown sugar
  • pinch of salt
  • 300 g all purpose flour
  • 100 ml milk
  • 2 ts vanilla extract
  • chocolate chips

Preparation

  1. Preheat the oven to 190°C.
  2. Begin with the crust. Cream together the sugars (dark, light and granulated) and the butter. I used a spatula but a mixer will work too.
  3. Add the egg and vanilla extract.
  4. Mix in the flour, baking soda and salt too. Keep on mixing until everything is well combined.
  5. Fold in the chocolate chips.
  6. Put a portion of the dough in a pie dish (mine was about 25 cm). You'll probably have too much dough for the pie but you can freeze the excess and bake them as cookies later. * Put in the oven for about 5 minutes. After those five minutes, cover the pie with baking paper and baking lentils (or whatever you call it) and put in the oven (again) for another 30 minutes. 
  7. Meanwhile, work on the filling. Cream together the butter and the sugar. 
  8. Add a little bit of milk, alternating with the flour. Keep mixing everything together until it's pretty creamy. Fold in the chocolate chips.
  9. When your crust is ready, let it cool down. When it's cold, you can add the filling. Just spread it around with a spatula.
  10. To finish, you can add some melted chocolate and drizzle it on top. As you can see; I still need to work on my drizzling skills.
