New Year's resolutions.

It's been a busy couple of days lately, with all these parties to attend. Tonight is probably the last one in the series, so enjoy it while you can. At least for me, it means that I can return to a normal studying schedule (unfortunately). Anyway, I hope you have a blast tonight and that you won't be too hungover later to celebrate with your family tomorrow! I'm pretty excited for 2014 and terrified as well because if it all goes to plan, this year will be a year of great changes for me. Normally, I will graduate (again) but for the last time and I will be done studying... which means I have to start looking for a job. A real one, like the grown ups have. I'm terrified just thinking about it! But anyway, that's for later this year! Right now, I'm focusing on my new year's resolutions which I'll probably have forgotten about around the end of January. Although I must say that I did pretty good on last year's resolutions!

Oh, and... HAPPY NEW YEAR EVERYONE!

DIY Bow bobby pins

Usually, I don't really dress up all that much for the holidays. I mean, I throw on a nice dress, but that's kind of it. The last couple of days, I've noticed with my friends that I might be an exception. They're all stressing about what to wear, how to style their hair and busy with manicures, pedicures, waxing legs and eyebrows... Man, it's exhausting just hearing them talk about it. So I have a little suggestion for those who are just like my friends and don't know what to do with their hair yet. With these DIY bobby pins, your hairdo will look instantly cute and if anyone asks you where you got it, you can say "I made it myself". That's always a win for me.
You just need a little leftover fabric and you can follow this tutorial (or you can just type in 'DIY hair bow' on google and you'll have thousands of hits). I more or less did it the same way, I only used a bobby pin to attach it to (it's easier with my hair) and in step 6, I used an elastic rubber band to scrunch it all up instead of sewing it. But if you prefer to sew that will work just fine too. Have fun making/wearing it!

Aachen.

If you remember my winter buckelist, you might have noticed that the number one thing to do was visiting as much christmas fairs as possible. And I'm proud to say that I can cross off at least one christmas fair that's been on my list for quite some time. 
In Aachen (Germany), just over the border, there's a very known / big christmas fair. I had never been there, so I asked the boyfriend if he would take me... And he did! I absolutely love the atmosphere this time of year. Everything is so cosy with all the lights and decorations. Oh, if only it could last all winter... Anyway, here are some pictures of our time in Aachen. As you'll probably notice.. We mostly ate and drank a lot!

Nutella Chocolate Milk.

Ah, the chocolate milk season has come! The couple of good/cozy weeks winter has, have arrived and I'm ready for them. From now until New Year's all the cities look their best, with sparkling lights all over the place, christmas trees everywhere and a couple of christmas fairs in the neighborhood. This is probably the only part of winter I like. After the holidays it only gets colder and it starts to snow (which I love... at first) and the roads get dangerous and accidents happen all over the place. Nah, I'm not looking forward to that part of winter... So I already thought of some comfort food! Nutella chocolate milk. It's as simple as that.

Winter bucketlist.

It feels like winter has begun. Temperature has dropped, about a week ago, it even started snowing for a while and I started wearing my terrycloth socks... All the signs are there! Chocolate cupcakes with vanilla frosting.

This weekend I was watching Sinterklaas's (comparable with the more known Santa Claus) arrival on television and it got me in the mood for baking. I didn't have any recipes at hand so I decided to do a little experimenting on my own. Surprisingly the results were not bad at all! I even invented my own vanilla butter cream frosting. Although you don't have to be a genius to come up with that, I admit. As you can see, I'm not the world's best cupcake decorator. I'm horrible, I know! I have tried so many times but I guess it's just not meant to be. Well, the taste is more important than the looks anyway, no?

Iced coffee.

I decided to immediately put my vanilla syrup to the test and made some iced coffee. There are many ways you can make iced coffee. I used to make coffee and let it cool off in the fridge over night but apparently there is a better way: cold brew your iced coffee. I tried it and I liked it. Here's how it's done:

Vanilla syrup.


In Leuven you have all these great coffee bars. And although I'm not a coffee addict or anything, I love a good latte every once and a while. Man, do I love those vanilla lattes! The only downside to it, is that it is quite expensive. Certainly for a poor student like myself. But I just might have found the solution! A couple of years ago, I discovered this recipe and I thought it was such a great idea but I didn't want to "waste" my expensive vanilla extract on it. But then last week, I ordered my first "playin' vanilla" of the year (that's how it's called in the coffee bar) and I realised that I should be able to make this at home! I remembered the post and since I learned how to make my own vanilla extract, I didn't feel like I would be "wasting" anything! I adapted the recipe a little bit though, I like it more vanilla-y.

Chocolate milk.

The one thing I love most about the wheather turning colder and colder is that it's chocolate milk time again. I'm not trying to tell anyone how to make hot cocoa. I think the basics are pretty clear: some milk, some chocolate, maybe a little sugar, microwave for a couple of minutes and voila. You're done. I do have a secret ingredient though... Oh yes, I do! And because I don't want to exclude anyone from the richness it brings to a simple cocoa, I'll even tell you what it is... (Drum rolls, please)...

Mushroom pasta.

There was a time I wasn't too fond of mushrooms. And it probably sounds crazy but that all changed after I tried this pasta. I mean, I gradually started too like them more and more but it was this pasta that completely won me over. The best thing is that it's so simple to make... and it's vegetarian. Crete /3

Here's the last pictures of our trip to Crete. I know it's only been three weeks or so but seeing this pictures makes me want to go back immediately. Especially since I've been under quite some stress since I started going to school again. Before we took our giant hiking trip to the Samaria Gorge, I thought I could use some rest so we stayed close to our hotel. That doesn't mean that we lay at the beach all day (just a couple of hours), we also visited the Arkadi Monastery. It's very impressive. And so is its history.

Crete /2

If you ever get tired of the beautiful sceneries in Crete - which I doubt, Crete has it all: sea, mountains, white beaches and palm trees - there are tons of other things you could do. The boyfriend and I decided to go to Knossos on our third day, an archaeological site dating from the Minoan era. We lucked out and found a Dutch guide who told us everything - or at least a lot - there is to know about Knossos.

Chocolate Chip Cookies.

By now, it's probably not a secret anymore that I love food. I love desserts and sugar, more specifically. I know veggies and fruit are much better and healthier for you but if you let me choose between a stick of celery and a cupcake, I'll always go for the cupcake. Always. Even if I liked celery. My favorite amongst the "it's bad for you, but so delicious"-category is - and always will be - the chocolate chip cookie (dough). So so sooooooo good. Crete /1

Yesterday I got back from the beautiful island Crete (Greece) and I just fell in love. Even though the first day started out with a 5 hour delay - which ended up to be 9 hours - we had the best time! The boyfriend and I rented a car so we could discover the island on our own. After getting used to the Cretan driving style (they're crazy!) we could focus on the beautiful landscapes. Here are a few pictures of our first day which was mostly about destressing from the crazy flight and learn more about the town, Rethymno.

Broccolli + salmon couscous.

This is just something I invented when I was trying to be healthy in Leuven (which to me, is not as easy as it sounds). Without my mom around to tell what's good for me or not - and okay, even when she is around - it's pretty easy to order pizza every day or get some Chinese takeaway (especially when the Chinese place is right across the street). So I just threw together all the healthy things that I like (which aren't that many) and decided to try couscous for the first time as well. Ever since, I made this a lot. And I mean: A LOT.

Today, it's been 2 years since I lost my best friend. His name was Dries and he was wonderful. Still is. He taught me so much and I'll never be able to thank him enough for it.

Dries, I miss you so much and there's so much I still want to tell you. You're the bestest friend anyone could have ever wished for and I'll never forget our talks, the funny looks across the room and our silliness. I love you so much, don't ever forget about that.

Chocolate-cinnamon brioches.

I don't really know how to call this but I do know it's delicious. I'm not sure if brioche is the right term but it has more or less the same texture as bread so I just called it that.
I have to be honest though: this is not a quick dessert kind of recipe. I worked on this all afternoon but I love doing this stuff. And in my opinion it was worth all that hard labour. It might sound/be weird but before trying out this recipe I never tried to chocolate-cinnamon combination. Apperently it's a very popular combination, but it had never come to my mind. So I tried it and loved it. I'm definetly going to try it in my hot chocolate next time! But first, here's the recipe for the brioches:

Strawberry-chocolate milkshake.

Strawberries and chocolate remain a classic combination. This recipe re-invents the traditional chocolate covered strawberry but is just as nice! And easy. You only need 3 ingredients and in no time you'll have this delicious milkshake standing in front of you. Perfect for a hot summer day.

Mint sugar.

Adding flavour to sugar isn't something new. You probably have many different recipes of different kinds of flavoured sugar but I just wanted to share my favourite with you. I think mint is one of the best herbs out there and this is a great way to incorporate it in more dishes.
And it's really easy too! All you need is a mudler, a couple of mint leaves and some sugar. The exact measurements depend on your taste, so just give it a go and add more mint leaves or sugar along the way.

Seaside.

The boyfriend has found a job! His first real job, by the way. No student or holiday work, but an actual, for real, everyday job. And that is great of course but it all happened a little sooner than expected. Which is why we needed to squeeze all the things we wanted to do this summer into the few days of vacation we had left together. One of those things was going to the seaside together (which has become a summer tradition of us). We tagged along with my parents and had an amazing day.

One of the great things about living in Belgium is that you don't have to drive that far to visit the sea. Which is why it's so easy to go back every year. We go ones a year and it's the perfect place to destress and relax a bit. Just sitting on the beach, listening to the sound of the waves and the sea gulls can be very soothing. That is when there are not too many tourists around. There's nothing worse than a crowded beach, in my opinion. We got lucky and had the place to ourselves. It was amazing and I'm already looking forward to next year.

Strawberry and Rhubarb Crumble.

Who doesn't love a good crumble? I wanted to experiment a bit and decided to use strawberries and rhubarb, a combination that never fails, in my opinion. And just look at it: doesn't it look delicious? I'm a huge fan of this experiment and I'm definitely going to make this more often!

Efteling.

Efteling is an amusement park in the Netherlands, not too far away from where I live. When I was a kid, we'd go there every year and I loved it so much! The reason why I loved it as a kid? The fairytale forest, of course! And if I'm being totally honest, that's still my favorite part of the park. I mean, the roller coasters and other attractions are pretty cool too, but I was still looking forward the most to see the tales of Little Red Riding Hood, Sleeping Beauty, Cinderella and so so so much more come alive.
Even though I just got back, I want to go again. I probably could write a very very long post about all the fairy tales, the roller coasters, magical boat rides, the food, the shows ... but I'm just gonna say that you have to visit it yourself... I promise you that within 5minutes of entering the park, you will have found you inner kid again and it will be a magical journey 'til you leave in the evening. And as a way to say goodbye, there's water show called Aquanura, right before closing time at the exit. Here's some pictures of what our day was like.

Homemade Ice tea.

What I love about homemade ice tea is that you can experiment with it as much as you want! You can totally personalize it to your own flavour. I happen to love lemon tea a lot, so that's what I tend to go by. But you can just as easily make it with camomile, rosehip tea, ... whatever you get your hands on. I've also heard that you can make this cold brewed. I didn't do that this time but maybe I'll try it in the future! Here's how I made my version:

Banana & chocolate muffins.

I first saw this recipe in one of the books of Nigella Lawson (Nigella Express, I believe) and I knew I had to try it right away. The original recipe is with butterscotch but I have no idea what that is. We just don't use it in Belgium (I've seen it on TV before, but I can't find it in the store). So I made it with chocolate instead. Anyway. I'm absolutely in love with Nigella Lawson. She makes everything look so easy. The real reason why I love her are the desserts. She's not thinking about being skinny or low-fat ingredients. NO! I think she understands what desserts are all about: indulging yourself. And if you decide to cheat on your diet (if you have one) you better make it worth it!

Bucketlist.

Ever since I made my 22 things before 23 checklist, I'm obsessed with making lists. Crossing of things I've accomplished or done really gives me satisfied feeling. Sometimes it are small things, like vacuum cleaning or going grocery shopping and sometimes it is something I've been working on for a long time, like finishing the Start to Run program (I did it!! Still need to train more to get to the 5km mark though: I'm a slow runner). And with my 22 before 23 list in mind, I've made a bucket list. A mini-bucket list, actually. I came up with 10 things I want to accomplish before I'm 30 or so: it's a long term project.
  1. Travel. This is definitely number 1 on the list. There are so many places I still want to see. I don't know if I'm ever going to have children - I'm still undecided - but if I do, I feel I have to do as much travelling as possible before I'm stuck here at home. I want to see America (I dream of going to New York, Los Angeles, San Fransisco, ...) and I want to do road trips, to see Portugal and travel through France by car. Just me and my boyfriend. We'll have so much fun!

Diploma: check!

I did it! I actually graduated university! Yesterday, there was a reception for all the graduates where my friends and I officially got our grades on paper. For the actual diploma I have to wait until April, but I got it, that's what's most important. Oh, and I graduated cum laude (I'm too proud not to brag, sorry).

I'm just so happy and thankful for the last four years. I've met some amazing people, made friends that will last for a long time (I hope) and learned so much about media (duh) and myself. Going to university and living alone most of the time has made me more independent, confident and pushed me to do things I never would have done otherwise. Being able to finish this without even repeating a year (which is actually pretty common) is my way of saying thanks to my parents (by saving them a lot of money and all). Without them I would never been able to go on this adventure in the first place. They are the best. I probably don't tell them that enough.

Grain pancakes with apple.

Call me crazy but I'm not a big fan of pancakes. Don't know why. Never have. I do like fibres and grains (probably the only healthy thing I like) and that's the reason I decided to try this pancake anyway. And am I glad I did! This is a healthy alternative to a regular pancake and believe it or not, it's made with cereal. I learned the recipe from my mom and I think she got it from Weigt Watchers, so it's pretty save to say that this is good for you. It might not look like a lot but believe me, one pancake really fills your stomach.

Cookie Dough Cupcakes

There's nothing I don't love about cookie dough, I could eat everything cookie-dough related all day long. That's why I love these cupcakes so much! I discovered them through Pinterest and they happened to be from my favorite cooking site. I should have known. I have to warn you though, this is not something you make quickly. It might be my lack of organisation or just because I'm slow... or the fact that I can only bake 6 cupcakes at once but it took me a whole afternoon to finish these beauties. It was worth every second though. They. Are. SO. Good. I did change the recipe a bit (sometimes I'm just too lazy to go to the store to get the right ingredients) but it turned out okay. Strawberry Daiquiri.


For a minute there, I thought summer had begun. But, as usual, rain had to ruin the party. While I was still high on sunshine and had the belief that summer was just around the corner, I started thinking about all those summer cocktails. My best friend and I are on the hunt for the best strawberry daiquiri in town after we had it in a Cuban cocktailbar in Amsterdam. So far, we haven't met anything that comes even close to the one in that bar. I know it's risky, but I tried to give it a shot myself. Still not the same as in Amsterdam, but maybe I just remember it wrong. Besides, this one isn't half bad either (it's not the "official" recipe, I improvised a bit).

DIY Vanilla extract






DIY vanille-extrtact: beste ontdekking die ik in maanden heb gedaan! En ik wil jullie graag deel laten uitmaken van de vreugde! Als je zoals mij van bakken houdt, gaat je dit nog heel handig van pas komen, geloof mij! En het beste van al? Het is supergemakkelijk om te maken; je hebt slechts 2 ingrediënten nodig. Met een vanillestok en wodka, maak je heel eenvoudig je eigen vanille-extract. Maak je je zorgen om de alcohol in je baksels? Wel, de alcohol verdampt tijdens het bakken dus je kan het met een gerust hart ook aan kinderen serveren.

Wishlist.

Is it weird posting a wishlist the day after your birthday? This doesn't mean I'm not happy with my gifts or anything (because I am, you're looking at the proud owner of a Coldplay-mug now). 22 things to do before 23

Tomorrow I turn 22, not really a mile stone age but hey, it's my birthday! I would probably love birthdays more if I didn't have to study every time (one of the perks of being born in June: there are always exams which you need to study for). But just one more year to go and I will be done studying (hopefully). Anyway, I saw these fun lists of goals for your next birthday turning up on different blogs I follow and I thought it would be fun to give it a try! It was actually harder than I thought to come up with 22 goals I want to accomplish in a year. So here it is: my 22 goals to accomplish before I turn 23:
  1. Get my first manicure. I actually have a gift box lying somewhere over here to get a professional manicure and I can't wait to use it! It will be my first.
  2. Get my driver's licence. Because yes: I'm 22 years old and I still don't have a driver's licence. Hopefully that will be different same time next year!
  3. Finish the Start to Run program/Run 5km. This is actually one of my new year's resolutions as well so I'm already training for it. The goal is to run 5km with the help of a podcast and someone encouraging you to keep on going!

Strawberry Lemonade

I love love love strawberries! It was only last year that I discovered the joy of strawberry lemonade (better late than never, I guess?). I got the original recipe from Annies eats (love love love that site as well!), but since we use a different kind of measuring system I adapted it a little bit to my own liking (and with different measures).

It's alive!

Hello! 

So the first blog post, that's kind of exciting, a little presure though because I don't want to make a big fool of myself from the start. But that's probably inevitable because English is not my native language. But first let me start with a quick introduction!

So, that's me. My name is Inez by the way. You might know me from eatyouriloveyous.wordpress.com, but you probably won't because nobody ever read that thing. It's also in Dutch. I was thinking about blogging in English for quite some time now but I was never really sure if I could do it. I finally figured I would take the risk and see what comes out of it. If I make some silly errors, you'll just have to excuse me! And since it would be kind of weird to start blogging on a Dutch website, I made a new one.
But a little more about myself: I'm 21 years old (for now, I've got a birthday coming up soon) and from Belgium, a small country in Western Europe, near the sea and just above France but it's mostly known for the chocolates and the waffles. I love taking pictures, although I'm not al that good at it. I'm planning on changing that one day though and in the meantime, I'll just say practice makes perfect. There are many other things I enjoy as well, like travelling, music, baking, eating and drinking, going out and so on.  You'll probably find all of these things on the blog in the future. I'm an only child, so no brothers and sisters for me, but I don't miss it either. I've grown accustomed to being alone and I actually like it. And for those times I just want to be around people, there's always my wonderful boyfriend and his large family to entertain me. 
So I guess that's pretty much it for now, if you want to know more about me, just ask! But you'll probably figure me out in the next couple of posts. Have a nice day!
